This is one of my chalkboards that my lovely boyfriend made for me for Christmas. I just got around to drawing something on it. The other one is smaller, and I will do another post on what I decide to put on that one! The smaller one will go up in my classroom. If anyone has any ideas on what to put on the smaller one for my classroom, let me know! I'd love to hear suggestions!

I did this writing activity with my students. I cut off the top part of the picture for privacy reasons for the child. I took their picture, printed them off, and glued them on the picture. I used black, blue, and green construction paper for this activity. I let them choose between blue and green.
 
 
 
 
 
 
I did this activity with my 2nd and 3rd grade after-school kiddo's. They did a great job!

"The Day the Crayons Quit" by Drew Daywalt
 
This is one of my absolute favorite books. It's about crayons writing letters to their owner about their feelings; for example, the pink crayon is very upset because he/she doesn't get used very often other than by his little sister in her princess coloring book. Then, it goes on to say from another crayon that he is embarrassed because someone took his clothes off (wrapper). Now he won't come out of the crayon box because he's naked. I've read this book to many students, and they just laugh! They think it's so cool. Since reading this book to my after-school kiddo's, I have yet to see a crayon wrapper off of it's designated crayon. I love the imagination of the story. It shows that we aren't all the same. Each crayon gives his/her own defense of why they are misused or overused. They are all tired of being used for the same objects; for example, the black crayon is upset because he always is outlining things and never shading in anything. He says at one point that he doesn't understand why their can't be an occasional black beach ball. I truly adore this story, and I advise anyone to purchase this amazing book!

One of my favorites! 

Ingredients:
Crescent Rolls
1 Can of Cream of Chicken Soup
Milk (for Cream of Chicken Soup)
Shredded Grilled Chicken 
Mozzarella Cheese (Shredded)

Directions: 
Roll Chicken and Cheese up in the Crescent Rolls however much you desire. Place them in a 9 x 13 casserole dish. Prepare the soup and pour over the crescent rolls. Bake at 350 F for approximately 30 minutes or the crescent rolls start to brown.

Ranch Parmesan Crusted Chicken

I absolutely love this recipe! Thought I would share. 


Ingredients

*measurements are approximate. Use your own judgement based on what your family likes.
4 chicken breasts
1 cup crushed Ritz crackers (about 3/4 of a sleeve)
1/2 cup shredded Parmesan Cheese
1 Tbsp Parsley flakes
2 Tbsp Ranch Dressing
2 tsp garlic salt
Instructions

In a sealed ziploc bag, crush Ritz crackers by hand or with a rolling pin. Add Parmesan Cheese and parsley flakes.
Rinse chicken breasts and pat dry. Arrange in a 9x12 dish. Sprinkle with garlic salt and then spread a thin layer of ranch dressing over the top. Sprinkle a handful of cracker/cheese mixture on each chicken breast and pat down.
Bake in a 400 degree oven for about 20 minutes, or until the top is golden brown.

Ingredients:
Red Velvet Cake Mix
Eggs (Required amount on cake mix box)
Vegetable Oil (Required amount on cake mix box)
Water
Cream Cheese Icing

Directions:
Fix cake mix according to directions on box. Use a cookie sheet. Place the mix on the sheet in circles like a cookie approximately 1 inch wide. It doesn't take as long as cupcakes to fix. You have to watch them to see them stiffen. They will not get too stiff, for it's cake mix. Once they are done, lather the pies with cream cheese icing and put the two pieces together. These are delicious! I suggest keeping them cold. They are much better that way.

Ingredients:
Pack of Original Oreos (or any other type you would like)
White Chocolate chips (approximately 2-3 bags) 
Cookie Dough (I get the big tub)

Directions:
Take apart the Oreos and put cookie dough inside. Melt the chocolate chips in the microwave. I dip the Oreos in the white chocolate and place them on a cookie sheet to dry.

I have tweeked this recipe, for I don't use the Fiesta Ranch packet. However, you can if you'd like. It's just not that easy to find (at least around here). I also use bacon bits. 

Ingredients:

  • *1 packet Hidden Valley Ranch Dip - (reduce amount for less intense flavor - you can use) 
  • 10 ounce can Rotel Original (drain excess liquid)
  • 16 oz sour cream
  • 1 cup finely shredded cheddar cheese
  • One pouch of bacon bits (however much you desire) 
Directions
Mix all ingredients in a medium size bowl.  Chill in fridge for 1 hour.  Serve with your favorite tortilla chips.  Great with veggies too!  Enjoy!

Ingredients:

•1 tablespoon sour cream
•1 (1 ounce) package ranch dressing mix (such as Hidden Valley Ranch ®)
•1 (8 ounce) package cream cheese
•1/2 pound Cheddar cheese, shredded
•1/4 cup finely chopped pecans

 

 Instructions:
Mix the sour cream with ranch dressing mix in a bowl until smoothly combined. Add the cream cheese and Cheddar cheese to the bowl, and mix together with your hands until thoroughly blended. Chill the mixture for 5 minutes, then shape into a ball.
Place the pecans into a shallow bowl, and roll all sides of the cheese ball in the pecans to coat. Serve immediately.

Sausage Chip Dip

Ingredients

-          2 packages of cream cheese
-          2 packages of sausage (either regular, hot, or whatever is preferred)
-          1 can of Rotel (2 if preferred)
-          Chips

Directions

-          Put cream cheese and Rotel into the crockpot and turn on High
-          Cook sausage to a brown
-          Drain out the grease from the sausage in the pan
-          Dry out sausage with paper towels
-          Place the sausage into crockpot
-          Let the dip melt together, should take approximately 30 minutes
-          Ready to serve J

Ingredients:
1 Box of Lucky Charms Cereal
6 cups of Rold Gold Pretzel Sticks (1 bag)
1 or 2 bags of M&M’s (depending on how much you like)
4 cups of white chocolate chips (2 bags)
Sprinkles
 
Directions:
Pour box of cereal onto a large baking sheet. Pick out all the marshmallows and put them aside
In a large bowl mix the pretzels, M&M’s and marshmallows together
In a medium microwavable bowl, microwave white chocolate chips for about 2 minutes (stirring every 30 seconds)
Pour over mixture and toss until evenly coated
Spread mixture in single layer on baking sheet, and immediately sprinkle sprinkles across the mix
Let sit for about 15 minutes
and Enjoy!!

Ingredients:
-          1 package Oreos
-          ½ stick butter
-          One 8 oz. package cream cheese, softened
-          1 small package vanilla instant pudding
-          One 8 oz. container of Cool Whip
-          3 cups of milk
-          1 cup of sugar

Directions:
-          Crush Oreos in a 9x13 pan, save a few for the top
-          Melt butter and pour over Oreos
-          Mix together pudding mix, milk, cream cheese, and sugar
-          Fold in Cool Whip, Spread over Oreos
-          Sprinkle remaining crushed Oreos on top.
-          Chill/Freeze before serving.

M&M and Oreo Loaded Cookie Bars

Makes: 12

Ingredients:
-          1 cup unsalted butter (1 stick), melted
-          2 large egg
-          2 cup light brown sugar, packed
-          2 tablespoon vanilla extract
-          2 cup all-purpose flour
-          18 Oreos
-          1 cup M&Ms

Directions:

-          Preheat oven to 350 degrees. Spray with Pam if needed.
-          In a large, microwave-safe bowl met the butter, about 1 minute on high power
-          Wait momentarily before adding the eggs so you don’t scramble it. Add the egg, brown sugar, vanilla, and whisk until smooth
-          Add the flour and stir until just combined, don’t over-mix
-          Break the Oreos up into 3-4 pieces, and stir in the Oreos
-          Turn batter out into prepared pan, smoothing the top lightly with a spatula.
-          Evenly sprinkle the M&Ms over the top, lightly pressing them down with your finger or a spatula.
-          Bake for about 20-22 minutes, or until done based on add-ins used.

Oreo Peanut Butter Layered Brownies


Oreo Peanut Butter Layered Brownies

Ingredients
-          Package of Oreos
-          Full jar of Peanut Butter
-          1 box of Brownie Mix
o   Eggs (called for in the brownie mix)
o   Vegetable Oil (called for in the brownie mix)
-          Cupcake Liners

Directions
-          Place the cupcake liners in the cupcake pan
-          Mix the brownie mix together until blended
-          Pour enough brownie mix into the bottom of each cupcake liner to cover the bottom completely
-          Use one Oreo and put a layer of peanut butter on top of the Oreo, and place another Oreo on top of the first Oreo, now put another layer of peanut butter on top of the second Oreo
-          Place the two Oreos in the cupcake liner
-          Pour the brownie mix on top of the Oreos, and cover the Oreos
-          Leave enough space in the liner to not overflow
-          Continue for each Brownie
-          Bake at the temperature stated on the Brownie Mix Box
-          Bake at approximately 15-20 minutes, or until the brownie looks done on the top

o   Note that it won’t take as much as time because the liner is not full of brownie mix, the Oreos do not need to bake. There is just a small amount of brownie mix in the liner.

-- If anyone is either allergic to peanut butter or doesn't like the mixture of peanut butter and chocolate, I've also used marshmallow cream in replace of peanut butter!!

Ingredients

-          1 (15 oz) can whole kernel corn, drained
-          1 (15 oz) can cream-style corn
-          1 package Jiffy corn muffin mix (8 oz)
-          1 cup sour cream
-          ½ cup butter, melted
-          1 cup shredded cheddar cheese or your favorite

Directions

-          Preheat oven to 350 degrees, Mix all ingredients, minus the cheese, together and pour into a greased baking dish. After the casserole has baked for 45 minutes, or is set in the middle and golden brown, sprinkle with cheddar and put it back in the oven. Let the cheese melt, take the casserole out and enjoy this ridiculously buttered dish.

Pumpkin Whoopie Pies

 
Pumpkin Whoopie Pies

Serves: 30 Whoopie Pies
Prep time:  30 mins
Cook time:  10 mins
Total time:  40 mins

Ingredients

  • 1 Box Spice Cake Mix
  • 1 15oz Can Pureed Pumpkin
  • 1 Can Cream Cheese Icing
  • 2 Tsp Pumpkin Pie

Instructions
Preheat oven to 350 degrees F
Mix together the spice cake mix and pumpkin well, working out all lumps.
Pipe mixture onto non-stick or greased cookie sheet in half-dollar sized circles, smoothing out the tops of the cookies with a greased spoon (their shape doesn’t change much as they bake).
Bake for 10 minutes or until reasonably firm. Let cool.
Mix pumpkin pie spice into cream cheese icing.
Sandwich two cookies with a glob of cream cheese icing mix. Enjoy!

Spicy Cheddar Chex Mix


Spicy Cheddar Chex Mix
-          3 cups Rice Chex
-          3 Cups Corn Chex
-          3-4 cups mini pretzel twists
-          3 cups oyster crackers or Cheez-its
-          3 cups cheese curls
-          6 tbsp. butter, melted
-          1 and ½ tbsp. Worcestershire sauce
-          1 tsp. onion powder
-          1 tsp. garlic powder
-          1 tbsp. Nacho cheddar popcorn salt
-          dash of cayenne pepper

Preheat the oven to 275 F. In a small bowl whisk together the melted butter, w-sauce, and seasonings. Pour the seasoned butter over the dry ingredients and use a spatula to mix together until it’s all nice and evenly coated. Put it in the oven once full blended. Bake at 275 for one hour stirring every 15-20 minutes or so.
